The Sisters Can Cook, Who Knew?

Tonight, Stephanie came over for a little cooking lesson. I decided we would make cornflake crusted chicken, grilled zucchini, and sweet potato fries. We went to the grocery store first, Steph had never purchased chicken before, so that was our first lesson. We decided that one should always buy Foster Farms chicken because their commercials are funny and that's good marketing.

Steph tried to take a picture of the ingredients, in Pioneer Woman style. Let's see we have some wine, cornflakes, Pam, Ziploc bags, olives, olive oil, and a box of brownie mix. Needless to say, this was not representative of the actual ingredients.



I started cutting up the sweet potatoes. I ended up seasoning them with a blend of cayenne pepper, paprika, cumin, garlic salt, onion salt, and oregano. I just throw a dash of everything into a bowl. I use this blend for taco seasoning as well.



While I was chopping, Stephanie rooted around my fridge and ate random stuff. Like garlic stuffed olives that have been in there forever.



The bullies had to be put in jail, they kept waiting around for me to drop something and I kept tripping over them.



Cornflake crusted chicken is super easy and good. You just crush up cornflakes, add a little olive oil, paprika and Cayenne pepper. Then dip the chicken in an egg bath, roll in cornflakes, put it in a casserole dish and bake at 400 degrees for 30 minutes.



Cooking is hard work, Stephanie was getting parched. I made sure she rehydrated with Chardonnay.



Mmmm, grilled zucchini. I just sprayed olive oil pam on the zucchini, a little sea salt and coarse pepper. Its a quite a yummy, zero point side dish.




The meal ended up being really good. I like to set out lots of different dipping sauce choices for the chicken. The sweet potato fries were not as crispy as I would have liked, but baking is way healthier than frying.


And that box of brownie mix? Um, that was an epic fail. I cannot bake, at all. I even followed the directions on the box and ended up with a dish of brownie goo instead of actual brownies.
